Insanely delicious 7-ingredient lemon coconut bliss balls! One of my absolute favorite sweet & zesty bites to prep and keep in the freezer. They’re made from cashew butter, lightly sweetened with pure maple syrup, and coated in shredded coconut.

I made this recipe a while back and shared them on my Instagram feed, and have been wanting to get them on the blog for the longest time since so many of you have made them!

One bite and you’ll feel like you’re on a tropical island.

Ok that may be a stretch, but a girl can dream. Seriously though, these are SO good and very quick to whip up.

I’ve been trying to work on more freezer-friendly snacks and sweets for you guys, especially ones that can last a while. My cravings change pretty much daily, and I always like to have a variety of things in my freezer.

These are a lot different than your usual energy bites made of oats and nut butter, but equally delicious. But don’t worry- I have some recipes for those as well linked at the end of this post!

What you’ll need to make lemon coconut bliss balls

The ingredients for these bites are so simple, but somehow come together to form the most delicious sweet & zesty treat. Here’s what you’ll need-

  1. Cashew butter– I like to use one made of roasted cashews with no added sugar. I usually grab mine at Trader Joe’s! I wouldn’t suggest substituting any other nut butter for these since cashew is a lot more subtle in taste than the others, and really gives it that perfect flavor.
  2. Almond flour– this is the almond flour I like to bake with because its super fine!
  3. Pure maple syrup
  4. Shredded coconut– be sure to grab an unsweetened version to cut back on the added sugar
  5. Lemon juice
  6. Lemon zest
  7. Vanilla extract

Lemon Coconut Bliss Balls

Ingredients

  • 1 cup cashew butter, with no added sugar- mine was made from roasted cashews with added oil
  • 1/2 cup almond flour
  • 1/4 cup pure maple syrup
  • Juice from half a lemon (about 2 tbsp)
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened shredded coconut

Directions

  1. In a medium sized bowl, whisk together the cashew butter, lemon juice, maple syrup, lemon zest and vanilla extract.
  2. Add in the almond flour and mix well until a thick batter forms.
  3. Refrigerate the batter for 30 minutes.
  4. Pour your shredded coconut into a shallow bowl. I like to add in a little more lemon zest to the coconut for more flavor.
  5. With wet hands, roll about 1 tbsp worth of the mixture into balls, then roll each ball into the shredded coconut. Repeat until the batter is done.
  6. Place them onto a parchment lined plate and store the bites in the freezer for an additional 15 minutes to harden.
  7. Keep stored in the freezer for up to 3 months. They can also be refrigerated for a softer texture, though I prefer them frozen.

A friend of mine gave me this recipe and I was skeptical with my sweet tooth. These were perfect and way healthier than my usual go to candy! Will be making these all the time

These look delicious and everyone seems to have enjoyed! I am wondering if anyone has made these into “protein” balls? I have protein powder that I would maybe add in but that could also make things a bit dry. If anyone has had any experience with this, would love to here how you accomplished it 🙂
