This delicious gluten-free loaf with Florida OJ is the perfect treat to brighten up these cold winter days. It’s delicious on its own but made even better with a simple citrus glaze! This recipe was made in partnership with Florida Orange Juice, but all opinions are my own.

This loaf was one of my absolute favorite recipes my mom made and continues to make to this day! It’s such a simple cake style loaf to make, but the original version was filled with added sugar and oil, so I of course needed to give it a little nutritious spin with Florida OJ. 

This gluten-free loaf is made with 100% orange juice, gluten-free baking flour, sweetened with maple syrup and applesauce, and topped with a delicious citrus glaze.

Why choose Florida Orange Juice?

An 8-oz adult serving of 100% orange juice can provide key nutrients such as vitamin C, folate, potassium, and thiamin, which can all help support a healthy immune system. 

Vitamin C is a powerful antioxidant that can help protect your cells from free radicals- which when accumulated, cause oxidative stress in our bodies. Vitamin C supports the immune system by protecting your cells, promoting the production and function of immune cells.

An 8-ounce serving of 100% orange juice provides you with more than the recommended daily intake for vitamin C. It’s important to note that orange juice provides you with vitamins and minerals and helps support hydration because it contains several electrolytes, including potassium and calcium (in fortified juices), and magnesium in smaller amounts. Be sure to pair your glass of Florida OJ with a fiber filled breakfast for a perfectly balanced meal (a veggie omelet would be perfect!) 

While I do enjoy a glass of juice here and there, I love baking with Florida Orange Juice, too. This orange loaf is the perfect way to start your morning, and a favorite in our house. 

What you’ll need to make gluten-free orange loaf

  1. 100% orange juice
  2. 1:1 gluten-free baking flour
  3. Light brown sugar, or coconut sugar!
  4. Olive oil
  5. Applesauce
  6. Eggs 
  7. Orange zest
  8. Vanilla extract
  9. Baking powder
  10. Salt

This simple loaf is so delicious and flavorful, and nutritious- I know you guys are going to love it! I love having a slice with my morning coffee or snacking on it throughout the day when I’m craving something sweet.

Gluten-free Loaf with Florida OJ

Ingredients

  • 1 cups 1:1 gluten-free baking flour, with xanthan gum. If your blend doesn’t have it, add 1 tsp to the batter
  • 1 cup 100% orange juice
  • 1/2 cup + 2 tbsp coconut sugar, or light brown sugar
  • 1/2 cup olive oil
  • 1/2 cup unsweetened applesauce
  • 4 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Zest from 1 orange

Zesty Sugar Glaze

  • 1/3 cup powdered sugar
  • 1/2 -1 tbsp water or plant-based milk as needed
  • 1 tbsp orange zest

Directions

  1. Preheat your oven to 350.
  2. In a medium sized bowl, whisk together your eggs, sugar, oil, applesauce, and vanilla extract.
  3. Add in your orange juice and zest and mix well.
  4. Fold in your flour, salt, and baking powder. Gently whisk together until its fully incorporated, breaking up any clumps.
  5. Line a 9 x 5 loaf pan with parchment paper. Pour your batter into the pan and bake for 55-60 minutes. The top should be brown and a toothpick should come out clean. My oven needed 55 minutes. It may rise a lot, but will come down a bit once it cools.
  6. Remove from oven and let cool for at least 15 minutes.
  7. For the glaze, whisk together the powdered sugar, orange zest and milk- starting with 1/2 a tbsp. The glaze should be thick and easy to pour. If needed, add another 1/2 tbsp of liquid. If it’s too wet, add more powdered sugar by the tbsp until its reached desired consistency.
  8. Slice your loaf and enjoy!
  9. Store in a cool place for up to 3 days, or refrigerate for a week. Leftovers can be frozen for up to 2 months.

I have a question about the flour. Can you use almond flour. Or just regular flour?

Hey Mary, unfortunately I’m not certain almond flour would hold up well. If you search for orange on my site, I have another orange cake that uses almond and oat flour!
