How to make chocolate peanut butter cups
Here’s what you’ll need to make this simple recipe:
- rolled oats– oats are a rich source of fiber, protein and iron. They’re loaded with important vitamins and minerals, like phosphorous, magnesium, zinc and folate. I always have oats in my pantry for easy-to-make recipes
- natural peanut butter, I love using a creamy peanut butter made with roasted peanuts, but no added sugar
- pure maple syrup, to lightly sweeten the peanut butter mixture
- chia seeds– the chia seeds provide omega-3 fats, and help bind the mixture together
- dairy-free chocolate chips
- coconut oil, to help thin out the melted chocolate
- salt & cinnamon, for added flavor

- Prepare the peanut butter oat base by combining the oats, peanut butter, maple syrup, chia seeds, salt and cinnamon
- Line a 12-count muffin tray with paper lines and flatten about 1 tbsp of the oat mixture into each cup
- Melt the chocolate chips with coconut oil, then mix in some peanut butter to create the peanut butter chocolate topping
- Top each cup with melted chocolate and flakey sea salt
- Freeze to set for about an hour, then keep stored in the freezer

Peanut Butter Oat Cups
Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup unsweetened peanut butter
- 1/4 cup maple syrup
- 2 tbsp chia seeds
- 1/4 tsp cinnamon
- Pinch salt
Chocolate Coating
- 3/4 cups dairy-free chocolate chips
- 1 tbsp peanut butter
- 1 tsp coconut oil
- Flakey salt, to top
Directions
- In a large bowl whisk together the peanut butter and maple syrup until smooth. If your peanut butter isn’t runny, you can use an immersion blender or blender cup for this step.
- Add in the oats, chia seeds, salt and cinnamon and mix well.
- Line a 12-count muffin tray with paper liners and scoop about 2 tbsp of mixture into each cup. Flatten it down using the back of a spoon or your finger.
- Add the chocolate chips and coconut oil to a microwave safe bowl and microwave in 30-second increments until smooth. Once smooth, add in the peanut butter and mix well.
- Pour the chocolate over each oat cup.
- Top with flakey salt if desired and freeze for about an hour to set.
- Keep stored in the fridge for up to 2 weeks or freezer for up to 2 months.
