Breakfast bars are always a hit in our house. My husband isn’t huge on having a sit down breakfast, and I usually grab something quick on weekdays, so these chocolate chip oatmeal bars are so convenient!

I have a few oatmeal bar recipes on my blog, including a reader favorite- Chocolate Chunk Banana Oatmeal Bars. Although I love my banana recipes, I’ve been trying to come up with new breakfast options without them to switch things up.

These bars so seriously so easy to make, and can be customized to your liking. You can even add in some dried fruit and nuts in place of the chocolate chips for another flavor variety.

This recipe is one of my favorite meal preps because all of the ingredients are ones I typically keep in my pantry. It’s simple to throw together, and is the perfect breakfast or snack.

What you’ll need to make Chocolate Chip Oatmeal Bars

Rolled oats– the rolled oats give these bars their hearty texture, while providing whole grains and fiber. The recipe calls for quick-cooking oats, but if you don’t have any you can simply pulse your rolled oats in a blender for 10-20 seconds to chop them up!

Oat flour– oat flour is an affordable, nut-free flour that I love baking with. I prefer buying it pre-made since it’s a lot finer, but you can make your own by blending rolled oats until it’s fine like flour

Coconut sugar– I love the caramel-like sweetness that coconut sugar provides. It can also be swapped with light brown sugar. This recipe has less than half the amount of sugar than most other oatmeal bar recipes!

Applesauce– applesauce adds a moistness to these bars, and replaces some of the oil needed. I love using it in baking for its subtle taste. If needed, you can swap 2 mashed bananas for the applesauce

Eggs

Coconut oil– when baking with coconut oil, I always opt for refined coconut oil for its neutral taste and flavor

Dark chocolate chips

Cinnamon

Toss everything together in one bowl, spread it into a baking dish and bake until golden brown! These bars are super filling, and are basically a version of baked oatmeal.

These homemade bars are a healthier option than most other packaged breakfast bars, and can be easily frozen and defrosted as needed.

You can customize your oatmeal bars with different add-ins as desired. With just a few staple pantry items, you’ll have delicious breakfast bars ready to go for the week!

Ingredients

  • 2 cups quick-cooking rolled oat
  • 1 1/2 cups oat flour
  • 2 eggs, at room temp
  • 1/2 cup applesauce
  • 1/2 cup softened coconut oil
  • 3/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup dark chocolate chips

Directions

  1. Preheat your over to 350 F
  2. In a large bowl, whisk together the eggs, coconut oil, applesauce and coconut sugar until creamy. Add in the vanilla extract and stir well.
  3. Pour in the rolled oats, oat flour, cinnamon, salt and baking soda. Mix well until evenly incorporated.
  4. Fold in the chocolate chips, reserving some to top.
  5. Line a 9 x 13 baking dish with parchment paper and spread the mixture in evenly. Top with remaining chocolate chips.
  6. Bake for about 25 minutes, until the top is golden brown.
  7. Let it cool for 15 minutes, remove from the pan and slice into 12-16 bars.
  8. Store at room temp for up to 5 days, or refrigerate for up to 2 weeks. To rewarm, microwave for 30 seconds or place in oven for 2 minutes.

Unfortunately steel cut oats have a longer cooking time so i’m not sure they would turn out well with these bars!

I’ve never baked with aquafaba, but I think flax eggs would work well!
